Vegetarian Couscous Dish

Couscous (from North Africa) - served with vegetables.

5 tsp Oil.
1 Small onion, chopped.
1 Clove garlic, chopped.
1 Carrot, sliced.
½ Squash/zucchini, sliced and divided into four pieces.
½ Red bell pepper, diced.
200 g Chickpeas .
200 g Chopped tomatoes.
1 tsp Vegetable broth powder.
1/3 tsp Salt.
½ tsp Chili powder.
½ tsp Caraway/Meridian fennel/Persian cumin.
1 ½ dl / 110 g couscous.

1. Heat up the oil and add onion and garlic to it.

2. After a couple of minutes add the carrot, the zucchini and the bell pepper. Wait 8-10 minutes.

3. By this time, the carrots should be soft. Add the chickpeas, the tomatoes, vegetable broth powder and the other spices. Wait for another 10-12 minutes.

4. Prepare the couscous as written on its box.

5. You can mix the vegetable stew and the couscous, but it is not necessary. And voila, there you have it! Healthy and easy to make, what more can you ask for? Enjoy.

*Sorry guys, I don't know how to insert a picture. But google vegetarian couscous, and you'll get a lot of delicious pictures, hehe. It kind of looks like plao, but imo it tastes a lot better 8)
