We had a Maori artist friend who did that from New Zealand and he got hired as a cook and made a good living and moved on working as an artist. Perhaps you would be better off in a place where there is a Sikh community. You have the list, so you should get some information from them. If I may say so, you should not think of your situation as gambling, you must be more positive. Most important is to know what you and your wife really want, as I said, you must think hard about your decision and if you decide you want to immigrate, then you must become like warriors who remain focused on their goals no matter the sacrifice and be sure the sacrifice is enormous. It may be good for the future of your children but there is no guarantee they will ever thank you for that. I don't want to discourage you but I don't want to encourage you neither.
