"combining" Tables

I'm trying to create (several) graphs that will be updated weekly, and the
data from which the graph is based on is exported from a website (i can only
export it to excel, and i do tweak it a bit before it can be used). I'm
trying to use Access in a way so that the graphs will be automatically
updated in Excel (through the use of pivot tables)

I will export the modified tables to access weekly. Each week, the same
table format will be imported, with changes in the data. To create the graphs
that will chart the changes over X period of time, i will need to have a
"master" file where all the Fiscal weeks' data are in the same table. (i.e.
the field headings are the same, and each fiscal week's data is just added to
the end of the master table so that they'll appear as new records) Is there a
way to EASILY do this? I remember doing it once with just a click of a
button, but frustratingly, i've forgotten how. (I
saw that the union query has the ability to join the tables, but since this
scorecard will be an ongoing process, i would not like to have to modify a
query each time - i'm assuming that the union query would require that)
