Ok, I've found a resolution!

When you have the PivotChart up, you click on the bar you wish to add
the value onto, twice. Once you've done this twice and its selected all
of the bars in that series, you right click on the bar and go to
properties. You then tick the new icon below the first tab, which says
add values.
